Inspired by the iconic cake from Matilda, this ultra-rich chocolate cake is every chocolate lover’s dream. Moist, fudgy, and topped with a glossy chocolate ganache, it’s perfect for birthdays, celebrations, or indulgent moments.

Ingredients

  • 1¾ cups all-purpose flour

  • 2 cups sugar

  • ¾ cup unsweetened cocoa powder

  • 2 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp salt

  • 2 eggs

  • 1 cup buttermilk

  • ½ cup vegetable oil

  • 2 tsp vanilla extract

  • 1 cup hot coffee or hot water

Instructions

  • Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.

  • Mix dry ingredients in a large bowl.

  • Add eggs, buttermilk, oil, and vanilla. Beat until smooth.

  • Stir in hot coffee (or water) until well combined. Batter will be thin.

  • Divide evenly between pans and bake for 30–35 minutes. Cool completely.

  • Make ganache: Heat cream until just simmering, pour over chocolate, let sit 5 mins, then stir until smooth.

  • Frost cooled cake with ganache. Chill slightly to set if needed.

Notes

  • For extra richness, use high-quality dark cocoa powder.

  • Coffee enhances the chocolate flavor but doesn’t leave a coffee taste.

  • Cake layers can be made a day ahead and stored wrapped at room temperature.
