Inspired by the iconic cake from Matilda, this ultra-rich chocolate cake is every chocolate lover’s dream. Moist, fudgy, and topped with a glossy chocolate ganache, it’s perfect for birthdays, celebrations, or indulgent moments.
1¾ cups all-purpose flour
2 cups sugar
¾ cup unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 cup buttermilk
½ cup vegetable oil
2 tsp vanilla extract
1 cup hot coffee or hot water
Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
Mix dry ingredients in a large bowl.
Add eggs, buttermilk, oil, and vanilla. Beat until smooth.
Stir in hot coffee (or water) until well combined. Batter will be thin.
Divide evenly between pans and bake for 30–35 minutes. Cool completely.
Make ganache: Heat cream until just simmering, pour over chocolate, let sit 5 mins, then stir until smooth.
Frost cooled cake with ganache. Chill slightly to set if needed.
For extra richness, use high-quality dark cocoa powder.
Coffee enhances the chocolate flavor but doesn’t leave a coffee taste.
Cake layers can be made a day ahead and stored wrapped at room temperature.
