  • 1 pound boneless, skinless chicken breasts
  • 1 cup buffalo sauce (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded cheddar cheese
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup ranch dressing or blue cheese dressing
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix chicken with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Coat chicken with half of the buffalo sauce and bake on a lined baking sheet for 20-25 minutes until cooked through.
  4. Shred the chicken and toss it with remaining buffalo sauce.
  5. Prepare rice as directed; assemble bowls with rice as the base followed by shredded chicken and desired toppings.
