  • 2/3 cup cooked, mashed butternut squash
  • 1/2 pound mezzi rigatoni (or small shaped pasta)
  • 1 1/4 cup shredded cheddar cheese
  • 3/4 cup shredded smoked gouda cheese
  • 1/2 cup shredded parmesan cheese
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg (ground)
  • 1/8 teaspoon ground pepper
  • 1/4 teaspoon tabasco sauce

Instructions

  1. Cook the mezzi rigatoni according to the package instructions until al dente. Drain and set aside.
  2. In a large pot over medium heat, melt the butter. Whisk in the flour until smooth to create a roux.
  3. Gradually add milk while whisking continuously until the mixture thickens.
  4. Stir in cheddar, gouda, and parmesan cheeses until melted and creamy. Season with salt, nutmeg, ground pepper, and tabasco sauce.
  5. Gently fold in cooked pasta and mashed butternut squash until evenly coated.
  6. Transfer to a greased baking dish, optionally topping with extra cheese. Bake at 350°F (175°C) for 25-30 minutes until golden brown.
