  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta

Instructions

  1. Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Place the frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet. Drizzle with olive oil and sprinkle with salt, black pepper, and thyme. Toss to combine.
  3. Roast the vegetables for about 20 minutes until tender.
  4. Cook pasta according to package instructions until al dente; reserve 1/3 cup of pasta water before draining.
  5. Transfer roasted vegetables to a blender along with reserved pasta water; blend until smooth.
  6. Combine sauce with cooked pasta and serve immediately.
