  • 3 medium Granny Smith apples (peeled and diced)
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press firmly into the bottom of the prepared pan to form the crust.
  3. In another bowl, beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla. Pour over the crust.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg; spread evenly over the cheesecake layer.
  5. For the crumble topping, mix flour, brown sugar, and cold cubed butter until crumbly; sprinkle over apples.
  6. Bake for about 45 minutes or until set in the center.
  7. While cooling, prepare caramel sauce by combining sugar and water in a saucepan until amber; whisk in heavy cream and salt until smooth.
  8. Drizzle caramel over cooled bars before slicing; chill for at least an hour before serving.
