  • 4 large bell peppers
  • 1 lb lean ground turkey
  • 1 cup corn (Mexicorn or roasted)
  • 1 cup canned black beans (drained and rinsed)
  • 2 cups tomato salsa
  • 1 cup cooked brown rice (or quinoa)
  • 1 cup shredded cheese (Mexican blend or sharp cheddar)
  • 1 tablespoon olive oil or avocado oil
  • 1 medium onion, chopped (about 1 cup)
  • 1/2 tablespoon minced garlic
  • 2 tablespoons taco seasoning
  • Salt and pepper – to taste
  • Olive oil spray or 2 teaspoons olive oil

Instructions

  1. Preheat your oven to 350°F. Cut each bell pepper in half lengthwise, remove seeds, and place cut side up in a baking dish. Lightly spray with olive oil and season with salt and pepper.
  2. Bake peppers for 15 minutes until slightly softened.
  3. In a skillet over medium-high heat, add olive oil and brown the ground turkey. After about 3 minutes, add taco seasoning, onions, and garlic; cook until fragrant.
  4. Stir in corn, black beans, salsa, and brown rice; simmer on low until heated through.
  5. Fill each pepper half with the turkey mixture, top with shredded cheese, and bake for an additional 15 minutes until bubbly.
