  • 2 tablespoons granulated sugar
  • 12 tablespoons very cold unsalted butter
  • ¼ cup very cold water
  • lbs baking apples (such as Honeycrisp or Granny Smith)
  • ⅓ cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons unsalted butter (melted)
  • 1 egg (beaten)
  • 2 tablespoons turbinado sugar
  • Optional: 1 tablespoon apricot jelly or jam (for glaze)

Instructions

  1. Make the crust: Combine flour, salt, and sugar in a food processor. Add cold butter and pulse until pea-sized pieces form. Add cold water gradually and pulse until moistened but crumbly. Form into a disk, wrap in plastic, and refrigerate.
  2. Prepare the filling: Thinly slice apples and mix with sugar, vanilla, cinnamon, melted butter, and salt in a bowl.
  3. Roll out dough: On parchment paper, roll out chilled dough into a circle about 14 inches wide.
  4. Assemble tart: Sprinkle flour on the dough base and arrange apple slices in overlapping circles. Fold edges over for a rustic look.
  5. Brush & chill: Coat edges with beaten egg and sprinkle with turbinado sugar. Chill assembled tart for 15-20 minutes.
  6. Bake: Preheat oven to 350°F (175°C). Bake for 55-65 minutes until golden brown.
  7. Cool & glaze (optional): Let cool before brushing with melted apricot jelly mixed with water.
  8. Serve: Slice warm or at room temperature.
