  • 1/2 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 1/2 cup unsalted butter (softened)
  • 4 ounces cream cheese
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon whipping cream (if needed, half and half works too)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, ginger powder, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, cream together softened butter with brown and granulated sugars until fluffy.
  4. Mix in molasses and vanilla extract, then add the egg until smooth.
  5. Gradually combine dry ingredients with wet ingredients and fold in rolled oats.
  6. Scoop tablespoon-sized portions onto parchment-lined baking sheets and bake for about 9 minutes until lightly golden.
  7. Cool on racks before preparing the cream filling by beating softened butter and cream cheese with powdered sugar until desired sweetness is reached.
  8. Assemble by spreading filling between two cookies.
