  • 1 pound ground turkey
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 can (14.5 ounces) diced tomatoes (drained)
  • 8 medium flour or corn tortillas
  • 1 can (10 ounces) enchilada sauce
  • 1 ½ cups shredded cheese

Instructions

  1. Sauté the onion in olive oil over medium heat until translucent. Add garlic and cook for an additional minute.
  2. Add ground turkey to the skillet and brown until no longer pink.
  3. Stir in black beans, diced tomatoes, green chilies, chili powder, cumin, smoked paprika, salt, and pepper. Simmer for about 5 minutes.
  4. Preheat oven to 350°F (175°C). Spread some enchilada sauce in a baking dish. Fill tortillas with the turkey mixture, roll them up, and place seam-side down in the dish.
  5. Top with remaining enchilada sauce and cheese. Bake covered with foil for 20 minutes, then uncovered for another 10-15 minutes until bubbly and golden.
