  • 1/4 tsp cream of tartar
  • 1/2 cup white sugar
  • 1 stick unsalted butter (softened)
  • 2 cups confectioner’s sugar
  • 2 tbsp milk
  • Purple gel food coloring
  • Black decorating frosting

Instructions

  1. Preheat your oven to 200°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat egg whites until frothy. Add cream of tartar and gradually incorporate sugar while increasing mixer speed until bright white semi-stiff peaks form.
  3. Pipe mounds onto the baking sheet to resemble ghosts and bake for 2 hours. Turn off the oven and leave meringues inside for an additional 30 minutes to dry completely.
  4. While meringues bake, whip together softened butter, confectioner’s sugar, milk, and purple gel food coloring until smooth.
  5. Frost cooled cupcakes with purple buttercream and top each with a meringue ghost using black frosting for eyes and mouth.
