  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cayenne pepper
  • 1/2 teaspoon salt
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup chopped red onion
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1/4 cup water

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut chicken into bite-sized pieces.
  3. Mix spices (cumin, paprika, turmeric, coriander, garlic powder, onion powder, cinnamon, black pepper, cayenne pepper, salt) in a bowl.
  4. Coat chicken with olive oil and spice mixture; toss to coat evenly.

  6. Cook quinoa according to package instructions.
