  • 1 yellow onion (diced)
  • 2 carrots (sliced into rounds)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed well)
  • 1 lb gnocchi (Italian potato dumplings)
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed out and rinsed)
  • 8 sprigs fresh thyme
  • 2 bay leaves
  • 1 tbsp smoked paprika
  • 1/3 cup whole wheat pastry flour
  • 6 cups vegetable stock (low sodium)
  • 1/3 cup apple vinegar
  • sea salt + black pepper to taste
  • 1/3 cup fresh Italian parsley (roughly chopped)

Instructions

  1. Sauté diced onion and sliced carrots in a heavy-bottom dutch oven over medium-low heat until the onion is translucent.
  2. Add minced garlic and cook briefly until fragrant.
  3. Stir in rinsed jackfruit, thyme sprigs, bay leaves, and apple vinegar. Simmer until the vinegar evaporates.
  4. Whisk together whole wheat pastry flour and vegetable stock; pour into the pot. Add smoked paprika and whole cloves, stirring to combine.
  5. Cook for about 45 minutes until jackfruit is tender.
  6. Add gnocchi, diced tomatoes, and green peas; cook until gnocchi float to the top.
  7. Discard thyme sprigs and cloves, season with salt and pepper to taste, then stir in chopped parsley before serving.
