  • 1 lb Italian chicken sausage
  • 1 small sweet onion, diced
  • 3 carrots, peeled and diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 teaspoon poultry seasoning
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Pinch red pepper flakes
  • 3 tablespoons flour
  • 4 gold potatoes, cubed
  • 6 cups chicken broth
  • 2 cans white beans, drained and rinsed
  • 1 cup heavy cream (or plant-based alternative)
  • 1 bunch Tuscan kale, ribs removed and thinly sliced
  • 2 tablespoons apple cider vinegar
  • Fresh parsley, chives or basil for garnish

Instructions

  1. In a large pot, brown the Italian chicken sausage over medium-high heat until fully cooked. Drain excess grease.
  2. Sauté diced onion, carrots, and celery in the same pot for about 4-6 minutes until softened. Add minced garlic and spices; cook until fragrant.
  3. Stir in flour to coat the vegetables. Add cubed potatoes and chicken broth; bring to boil, then simmer for 20 minutes until thickened.
  4. Mix in white beans, kale, and heavy cream along with the cooked sausage. Allow to combine until kale is wilted. Finish with apple cider vinegar for brightness.
  5. Serve hot with fresh herbs on top and crusty bread on the side.
