  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 4 large eggs
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1 cup fresh raspberries
  • 2 tbsp granulated sugar (for swirl)
  • 1 tbsp lemon juice (for swirl)

Instructions

  1. In a saucepan, combine raspberries, 2 tbsp sugar, and 1 tbsp lemon juice. Simmer for 5-7 minutes until thickened. Strain to remove seeds and set aside.
  2. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, ¼ cup sugar, and melted butter; press into the bottom of a springform pan. Bake for 8-10 minutes.
  3. Beat cream cheese until smooth; add in the remaining sugar, sour cream, lemon zest, lemon juice, and eggs one at a time.
  4. Pour filling over cooled crust; drop spoonfuls of raspberry sauce on top and swirl gently.
  5. Bake for 55-65 minutes; cool in the oven for an hour before refrigerating for at least 4 hours or overnight.
