  • 1 cup orzo pasta
  • 1 cup mushrooms, sliced
  • 1/2 cup Marsala apple vinegar
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 5-7 minutes on each side until golden brown. Remove from skillet.
  2. In the same skillet, melt butter and sauté sliced mushrooms for about 4-5 minutes until browned. Add minced garlic and thyme; cook for an additional minute.
  3. Pour in Marsala apple vinegar while scraping up browned bits from the skillet.
  4. Add chicken broth and bring to a simmer. Stir in orzo and cook for about 8-10 minutes until al dente.
  5. Reduce heat to low; stir in heavy cream until smooth. Return chicken to skillet to warm through.
  6. Garnish with parsley before serving.
