  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. In a saucepan over medium heat, cook pumpkin puree for about 10 minutes, stirring frequently to reduce moisture.
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, cream together room temperature butter, brown sugar, and granulated sugar until light and fluffy. Beat in cooled pumpkin puree and vanilla extract.
  4. In a separate bowl, whisk together flour, cornstarch, baking soda, salt, and pumpkin pie spice.
  5. Gradually mix dry ingredients into wet ingredients without overmixing. Fold in chocolate chips.
  6. Scoop dough into balls (about 2 tablespoons each) and place on the prepared baking sheet. Chill in the freezer for at least 30 minutes.
  7. Preheat oven to 350°F (175°C) and bake chilled dough balls for about 10-12 minutes until slightly under-baked.
  8. Allow cookies to cool on the baking sheet for several minutes before transferring them to a cooling rack.
