  • 1 pound dry red beans
  • 2 tablespoons olive oil
  • 12 to 14 ounces turkey sausage
  • ½ tablespoon butter
  • 1 large yellow onion (diced)
  • 2 celery ribs (diced)
  • 1 small red bell pepper (diced)
  • 1 small green bell pepper (diced)
  • 6 cloves garlic (minced)
  • Salt and spices (oregano, thyme, paprika, cayenne pepper)
  • 6 to 7 cups low sodium vegetable broth
  • Fresh parsley and green onions for garnish
  • 1½ cups cooked rice

Instructions

  1. Soak the dry beans overnight in water.
  2. Heat olive oil in a Dutch oven over medium heat; brown sliced turkey sausage on both sides.
  3. In the same pot, melt butter and sauté onion until soft; add celery, bell peppers, and garlic.
  4. Stir in seasonings and pour in vegetable broth; scrape up any brown bits.
  5. Add drained beans and browned sausage; stir well.
  6. Bring to a boil then reduce heat; cover and simmer for about 90 minutes until beans are tender.
  7. Mash a cup of cooked beans for creaminess; stir back into the pot.
  8. Adjust consistency with water or broth as needed; finish with parsley and green onions.
