  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut pockets into each chicken breast without slicing all the way through.
  3. Sauté garlic in olive oil until fragrant; add spinach and cook until wilted.
  4. Combine roasted red peppers, mozzarella, sautéed spinach, herbs, salt, and pepper in a bowl.
  5. Stuff each chicken breast with the filling and secure with toothpicks or kitchen twine.
  6. Sear each stuffed chicken breast in olive oil until golden brown on both sides.
  7. Bake in the oven for 20-25 minutes until cooked through (internal temperature should be 165°F / 74°C).
  8. Let rest before serving.
