Ingredients

Scale
  • 250g whole milk
  • 50g granulated sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs
  • 565g all-purpose flour
  • 850g diced apples
  • 30g unsalted butter (for filling)
  • 190g unsalted butter (for frosting)
  • 225g cream cheese
  • 280g brown sugar

Instructions

  1. Warm the milk until lukewarm and combine it with sugar and yeast. Let sit for about 5-10 minutes until frothy.
  2. Add eggs, salt, and flour to the yeast mixture; mix until combined. Incorporate softened butter and knead for about 5-7 minutes until smooth.
  3. Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm area until doubled (about an hour).
  4. For the filling, melt butter in a saucepan over medium heat; add diced apples, sugar, cinnamon, and salt. Cook until slightly softened.
  5. Punch down the risen dough on a floured surface, roll it out into a rectangle, spread the apple filling evenly, then roll it tightly into a log shape.
  6. Cut into equal pieces (about 12 rolls) and arrange them in a greased baking dish. Let rise again for about 30 minutes.
  7. Preheat oven to 375°F (190°C) and bake rolls for about 25-30 minutes until golden brown.
  8. Prepare the frosting by whipping together softened butter, cream cheese, powdered sugar, whipping cream, and salt; spread generously over warm rolls.
