  • 1/2 cup coconut flour
  • 1/4 cup dark cocoa powder
  • 1/4 cup granulated sweetener (like Swerve)
  • 1/2 cup pumpkin puree
  • 1/2 cup plain applesauce
  • 1/3 cup unsweetened vanilla almond milk
  • 2 tablespoons dairy-free white chocolate chips (optional)
  • 1/2 teaspoon coconut oil

Instructions

  1. In a large bowl, mix together the protein powder, coconut flour, dark cocoa powder, and sweetener until well combined.
  2. Add in the pumpkin puree, applesauce, and almond milk to the dry mixture. Stir until fully incorporated.
  3. Roll the mixture into small balls about one inch in diameter using your hands.
  4. Melt the coconut oil and mix with optional white chocolate chips. Dip each protein ball into the melted mixture to coat evenly.
  5. Place coated balls on a parchment-lined baking sheet and refrigerate for about 10 minutes to set.
